This season, give the humble bhajiya a delicious makeover with these regional favourites from across India.<\/strong><\/h6>\n<p>[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_column_text css=&#8221;&#8221;]<\/p>\n<h5 class=\"p1\"><span style=\"text-decoration: underline;\"><span class=\"s1\"><b>Kashmiri Nadru ke Pakode (Lotus Stem Fritters)<\/b><\/span><\/span><\/h5>\n<p><strong>Ingredients:<\/strong><br \/>\n2 lotus stems, 1 cup besan, 2 tbsp rice flour, \u00bd tsp each turmeric, fennel powder, dry ginger powder, cumin seeds and garam masala, 1 tsp red chilli powder, 1 tsp ajwain, a pinch of hing, salt, water and oil for frying.<\/p>\n<p><strong>Method:<\/strong><br \/>\nPeel, slice and boil the lotus stems in salted water for 8\u201310 minutes. Drain and pat dry. Mix all the dry ingredients, add water to make a thick batter and coat the slices. Deep-fry until golden and crisp. Serve hot with mint-coriander chutney.[\/vc_column_text][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_single_image image=&#8221;4996&#8243; img_size=&#8221;full&#8221; css=&#8221;&#8221;][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_single_image image=&#8221;4997&#8243; img_size=&#8221;full&#8221; css=&#8221;&#8221;][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_column_text css=&#8221;&#8221;]<\/p>\n<h5 class=\"p1\"><span style=\"text-decoration: underline;\"><span class=\"s1\"><b>UP ke Gulgule (Sweet Pakode)<\/b><\/span><\/span><\/h5>\n<p><strong>Ingredients:<\/strong><br \/>\n2 cups whole wheat flour, 1 cup grated jaggery (or \u00be cup sugar), \u00be cup warm water, 2 tbsp semolina, \u00bd tsp fennel seeds, \u00bc tsp cardamom powder, a pinch of salt, \u00bd tsp baking soda, and oil or ghee for frying.<\/p>\n<p><strong>Method:<\/strong><br \/>\nDissolve jaggery in warm water and strain. Mix the dry ingredients, add the jaggery syrup to make a thick batter, then stir in baking soda. Rest for 20\u201330 minutes. Drop spoonfuls into medium-hot oil and fry until golden brown and cooked through.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_column_text css=&#8221;&#8221;]<\/p>\n<h5 class=\"p1\"><span style=\"text-decoration: underline;\"><span class=\"s1\"><b>Karnataka Raw Jackfruit Pakodas<\/b><\/span><\/span><\/h5>\n<p><strong>Ingredients:<\/strong><br \/>\n500 g raw jackfruit, 1 cup besan, \u00bc cup rice flour, 1 tbsp semolina, 2 chopped green chillies, 1 tsp grated ginger, 8\u201310 chopped curry leaves, 1 tsp cumin seeds, \u00bd tsp red chilli powder, \u00bc tsp turmeric, a pinch of hing, salt, water and oil for frying.<\/p>\n<p><strong>Method:<\/strong><br \/>\nBoil the jackfruit with turmeric and salt until just tender. Drain and cool. Prepare a thick batter using the remaining ingredients, coat the jackfruit pieces and deep-fry until crisp and golden.
